Eles est\u00e3o presentes em todos os ambientes, sendo que os alimentos n\u00e3o s\u00e3o uma exce\u00e7\u00e3o. Enquanto alguns s\u00e3o essenciais para a produ\u00e7\u00e3o de novos alimentos, outros podem causar seu estrago ou at\u00e9 contamina\u00e7\u00f5es, ocasionando infec\u00e7\u00f5es e intoxica\u00e7\u00f5es ao serem ingeridos. Desta forma, os microrganismos encontrados em alimentos s\u00e3o classificados em tr\u00eas categorias, que ser\u00e3o abordadas a seguir:<\/p>\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-50d012c elementor-widget elementor-widget-heading\" data-id=\"50d012c\" data-element_type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\">Microrganismos tecnol\u00f3gicos<\/h2>\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-fa94fa6 elementor-widget elementor-widget-text-editor\" data-id=\"fa94fa6\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t<p>Microrganismos tecnol\u00f3gicos s\u00e3o aqueles que modificam as caracter\u00edsticas originais de determinado alimento, tornando-o em outro alimento, com outro gosto, sabor e apar\u00eancia. Exemplos de alimentos produzidos desta forma s\u00e3o os derivados de leite, como queijo e iogurte, bebidas alco\u00f3licas, p\u00e3es e bolos. Estes sofreram o processo de fermenta\u00e7\u00e3o, que tamb\u00e9m podem ajudar na sua conserva\u00e7\u00e3o. Al\u00e9m disso, outro produto da fermenta\u00e7\u00e3o, o etanol, \u00e9 utilizado para a produ\u00e7\u00e3o de bebidas alco\u00f3licas, como cervejas e vinhos.<\/p>\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-72bb520 elementor-widget elementor-widget-heading\" data-id=\"72bb520\" data-element_type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\">Microrganismos deteriorantes<\/h2>\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-8cdeb69 elementor-widget elementor-widget-text-editor\" data-id=\"8cdeb69\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t<p>Microrganismos deteriorantes s\u00e3o aqueles que ocasionam altera\u00e7\u00f5es qu\u00edmicas prejudiciais aos alimentos, tornando-os impr\u00f3prios para o consumo. Estas mudan\u00e7as s\u00e3o evidenciadas pela mudan\u00e7a de cor, textura, odor ou sabor do alimento. Todos os alimentos entram em contato com uma diversidade de microrganismos em baixas taxas, principalmente se estiverem expostos ao ambiente. Com o passar do tempo, e dependendo das condi\u00e7\u00f5es do ambiente de armazenamento, como temperatura e luminosidade, al\u00e9m de caracter\u00edsticas do pr\u00f3prio alimento, como presen\u00e7a de determinados nutrientes, pH e umidade, grupos de microrganismos que conseguem crescer com maior velocidade nestas condi\u00e7\u00f5es tornam-se predominantes. As atividades metab\u00f3licas necess\u00e1rias para a sobreviv\u00eancia e prolifera\u00e7\u00e3o destes microrganismos s\u00e3o respons\u00e1veis pela deteriora\u00e7\u00e3o dos alimentos.<\/p>\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-df15ed0 elementor-widget elementor-widget-heading\" data-id=\"df15ed0\" data-element_type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\">Brochothrix\u00a0spp.<\/h2>\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-8d5beee elementor-widget elementor-widget-text-editor\" data-id=\"8d5beee\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t<p>\u00c9 uma bact\u00e9ria que causa a deteriora\u00e7\u00e3o principalmente de carnes refrigeradas, na presen\u00e7a de oxig\u00eanio. Formam col\u00f4nias com aspecto aveludado, de colora\u00e7\u00e3o vari\u00e1vel.<\/p>\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-26b4de8 elementor-widget elementor-widget-heading\" data-id=\"26b4de8\" data-element_type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\">Microrganismos patog\u00eanicos<\/h2>\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-24b964f elementor-widget elementor-widget-text-editor\" data-id=\"24b964f\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t<p>Microrganismos patog\u00eanicos s\u00e3o aqueles que contaminam os alimentos, podendo ou n\u00e3o liberar toxinas, causando infec\u00e7\u00f5es ou intoxica\u00e7\u00f5es quando ingeridos pelo indiv\u00edduo. Em outras palavras, s\u00e3o os pat\u00f3genos respons\u00e1veis pelas doen\u00e7as transmiss\u00edveis por alimentos. Grande parte das contamina\u00e7\u00f5es s\u00e3o decorrentes de falta de higiene no transporte, manipula\u00e7\u00e3o ou preparo dos alimentos, podendo ocasionar surtos de doen\u00e7as transmiss\u00edveis pelos alimentos, dependendo da escala de contamina\u00e7\u00e3o.<\/p>\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-91b252e elementor-widget elementor-widget-heading\" data-id=\"91b252e\" data-element_type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\">Salmonella spp.<\/h2>\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-4a91985 elementor-widget elementor-widget-text-editor\" data-id=\"4a91985\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t<p>\u00c9 uma bact\u00e9ria que pode ser transmitida por ingest\u00e3o de alimentos, como carnes, leite e ovos, ou \u00e1gua contaminados com fezes de animais infectados. As esp\u00e9cies que causam doen\u00e7as em humanos s\u00e3o <em>S. enterica<\/em> e <em>S. bongori<\/em>.
